Turkey Thigh Roulade

Ingredients

250 gm turkey thigh boneless
Salt & pepper to taste
50 ml olive oil
20 gm mixed berries
30 gm green, black olives and capers
10 gm curled parsley
20 gm butter
1 orange
250 ml of orange juice
100 gm sweet potato
Few rosemary sprigs 
20 ml honey

Directions

1. Take turkey thigh, hammer it into a thin slice & then marinate it with salt & pepper.

2. Chop the berries, capers, parsley, olives and mix them with butter.

3. Then put the butter mixture in the turkey thigh, roll it well & cover it with cling wrap.

4. Put the thigh in the refrigerator for 20 minutes.

5. Heat the turkey thigh and then cook it in the oven for 20 minutes at 170°C.

6. Make a sauce with orange rind, orange juice and honey.

7. Boil the sweet potato and cut them into fingers.

8. Fry the potato fingers, and de-glaze the orange rind sauce.

9. Take out the turkey roulade and cut it diagonal-wise.

10. Arrange it on a plate, and place potato fingers.

11. Drizzle orange rind sauce, on top of the roulade.
