Peru Shammi

Ingredients

400 gm boneless turkey meat
180 gm chana dal
2 gm turmeric powder
25 gm ginger
25 gm garlic
10 gm green chilli paste
1 bay leaf
2 green cardamom
1 black cardamom
1/2 inch cinnamon
Salt to taste
5 gm black pepper powder
20 gm garam masala powder
45 ml ghee
3 gm cumin seeds
4 gm fresh coriander
30 gm onion, chopped
3 gm green chilli, chopped
2 gm fresh mint

Directions

1. Wash and soak chana dal for a minimum of 1-2 hours.

2. Wash turkey pieces nicely and pressure cook them with soaked chana dal, turmeric powder, garam masala powder, red chilli powder, green chilli paste, salt, ginger, garlic and whole spices.

3. Once the turkey is done, pass it through a colander and collect the stock in a separate bowl which can be used later to make any curry.

4. Collect the cooled turkey and dal mix in a grinder jar and grind to make a fine mixture. The mixture may look fibrous because of the meat.

5. Add finely chopped onion, green chillies, mint and coriander and mix nicely till everything is incorporated well.

6. Heat a wide pan and grease it with 1-2 tablespoons of ghee.

7. Shape the mixture into a gallete and cook on a pan till golden brown on both sides.

8. Serve with onion rings, lemon and mint chutney.
