Ingredients
180 gm turkey
80 gm apple
30 gm bacon
50 gm celery
2 gm sea salt
1 gm black pepper powder
60 gm broccoli, blanched
3 gm thyme
5 ml extra virgin olive oil
1 lemon
Directions
1. Cut the breast part of the turkey and marinate it with salt pepper and thyme.
2. Sear the turkey on a high flame on a cast iron pan/griller.
3. Once seared, put it in the oven at 160°C for 5 minutes. Then rest the meat.
4. Roast the bacon in the oven at 200°C till it becomes crispy.
5. Wash both the stems and leaves of celery under running water.
6. Blanch the broccoli in boiling water for 2 minutes. Once done put it in ice-cold water to stop carry-over cooking.
Assembly
1. Take the cold turkey breast and cut it into small pieces.
2. Add sliced apples, broccoli and celery stalks, tossed with salt, pepper and lemon vinaigrette and garnish with celery leaves.
