Ingredients
1 medium-sized dressed turkey bird
5 ltr buttermilk
For Marination
150 gm green chilli, fresh
50 gm ginger
250 gm fresh garlic cloves
1 tbsp turmeric
25 gm black pepper
2 tbsp sugar
10 limes, juiced
70 gm fresh coriander
Salt to taste
100 gm butter for glazing
Directions
1. In a container, brine the turkey in buttermilk for at least 24 hours.
2. Take it out and place it on a dripping tray for 4-6 hours refrigerated.
3. Blend all ingredients for marinating and marinate the bird nicely in and out.
4. Refrigerate overnight for a minimum of 12 hours.
5. Preheat an oven to 180°c and roast turkey for 90-120 minutes.
6. Check for doneness by piercing in the thighs.
7. Once done, rest the bird outside the oven for an hour.
8. Serve hot sliced with lemon wedges and herbed rice.
