Ingredients
2 U.S. turkey drumsticks
40 gm ghee
100 gm onions, sliced thinly
3 green cardamom
5 gm ginger paste
5 gm garlic paste
15 gm nihari masala
20 gm wheat flour (atta)
5 gm turmeric powder
5 gm coriander powder
salt to taste
1 lemon
3 green chillies
For Nihari Masala
10 gm cumin seeds
5 gm saunth powder
5 green cardamom
1 inch cinnamon stick
1 black cardamom
3 gm cloves
2 bay leaf
5 gm peppercorn
2 gm grated nutmeg
2 star anise
2 pipli
Directions
1. Dry roast all the whole spices and grind them to a powder. Keep it in an air-tight container. It is advisable to prepare the nihari masala fresh every time.
2. Heat ghee in a heavy bottom stockpot, add the turkey legs, salt, ginger garlic paste, turmeric, and coriander powder and saute for a few minutes.
3. Add the nihari masala and add water. Cook on low flame till the meat gets tender.
4. When the meat is done, mix wheat flour in water, add it to the meat and cook till the gravy thickens, it should take roughly 10-15 minutes.
5. Serve it with lemon drizzle, slit green chillies, and ginger juliennes.
